Description

Chinese Steamed Egg uses medium eggs gently beaten with warm water, salt, and optionally milk or stock to create a smooth custard base. Straining the mixture removes bubbles and clumps for an even texture. The custard is steamed over simmering water, with the steaming time adjusted by the depth of the custard in the container, usually between 7 to 10 minutes.

After steaming, the dish rests briefly before being topped with sesame oil and light soy sauce to enhance aroma and flavor. Chopped scallions add a fresh, mild onion note. The resulting custard is silky and tender, with a smooth surface and delicate taste.

This dish can be served warm as a side or part of a meal, highlighting the subtle egg flavor complemented by the seasonings.

Adjust steaming time based on container shape to avoid overcooking. Replacing some water with milk is an option to achieve a milk steamed egg variant.

Servings

For each serving, you can simple make larger batches by ratio

  • 2 egg medium size
  • 1 cup water recommend using warmed boiled water, or milk or stock, warm
  • 1/4 tsp. salt or to taste
  • 2 tsp. sesame oil
  • 2 tsp. soy sauce light
  • chopped scallion , optional

Instructions

  1. Gently whisk eggs with pinch of salt and water.
  2. Strain the egg liquid and transfer to the container. Remove any bubbles on surface.
  3. Set up the steamer, bring the water to a boiling and slow down the fire to simmer for 8 to 10 minutes depending on your container. For the time, please see note 1.
  4. Remove from the fire and wait for 5 minutes to cool down a little bit.
  5. Transfer the containers out. Drizzle some sesame oil and light soy sauce and garnish chopped spring onion on top.
  6. Serve warm.

Notes

  • Adjust steaming time according to the depth of the custard and container shape to prevent overcooking.
  • You can replace some water with milk if you prefer a milk steamed egg variation.
