Description

Chinese Steamed Minced Pork features ground pork mixed with shredded soaked dried shiitake mushrooms, which contribute an earthy depth and chewy texture. The mushrooms are soaked for several hours to soften, then finely chopped before combining with pork. The mix is seasoned with sesame oil, sugar, salt, and oyster sauce which adds umami richness and savory balance.

The mixture is formed into approximately one-inch thick patties and steamed over boiling water on a rack for 15 to 20 minutes until set and cooked through. Steaming maintains moistness and tenderness in the pork, while integrating flavors evenly throughout.

This steamed minced pork can be served hot as a main dish or side in Chinese cuisine. Its savory-sweet balance and soft texture make it well-suited to pair with cooked rice or steamed vegetables.

  • 22 small dried shiitake mushrooms Or 11 large dried shiitake mushrooms, Chinese
  • 1 Pound ground pork (85% lean and 15% fat)
  • 1 tick green onion

Sauce:

  • ½ tablespoon sesame oil
  • 1 teaspoon sugar
  • teaspoon salt
  • 4 tablespoons oyster sauce

Instructions

  1. Wash and soak 22 small dried Chinese shiitake mushrooms for 4-6 hours before cooking. (Or, wash and soak 11 large one. I usually soak them the night before, so I can use them the next day.)
  2. After soaking the mushrooms, squeeze the water out.
  3. Put the soaked mushrooms into the chopper and chop until it's small pieces. (Because my chopper is small, I separate two times.)
  4. After that, put the chopped mushrooms into a container.
  5. Next, add 1 pound of ground pork into the container. (I use 85% lean and 15% fat.)
  6. Pour ½ tablespoon of sesame oil, 1 teaspoon of sugar, ⅛ teaspoon of salt and 4 tablespoons of oyster sauce into the container.
  7. The following step, mix the sauce with chopped mushrooms and ground pork very well.
  8. Lastly, put some mixture patty on the plate, level off and the thickness of the patty is around 1 inch. Boil some water in a pot. When the water is boiling, put a stand or rack into the water and put the plate on the stand. Steam it for 15-20 minutes depending on the thickness of the patty. (I normally time it for 15 minutes.) Or, steam it in the rice cooker during the rice cooking process. Top with some green onion when it is cooked.

Notes

  • Use either 22 small or 11 large dried shiitake mushrooms, soaked 4-6 hours or overnight for best texture.
  • Drain mushrooms well and chop finely to blend smoothly with the minced pork.
  • Ground pork (85% lean, 15% fat) simplifies preparation and keeps the mixture juicy.
  • Mix sauce ingredients thoroughly to ensure even seasoning before steaming.
  • Steam patties over boiling water for 15-20 minutes until firm and cooked through.
