Chinese tomato egg stir fry
Description
This recipe focuses on gently scrambled eggs cooked just until set and then combined with stir-fried medium-sized tomatoes in a small amount of vegetable oil. The addition of ketchup and sugar forms a glossy, mildly sweet sauce that coats both eggs and tomatoes. The 5 eggs lend a fluffy, moist texture contrasting with the soft but intact tomato pieces. A touch of salt and chopped green onion finish the dish with a balanced taste and mild onion aroma.
The method keeps the eggs tender by cooking them briefly and combining them last, which maintains their delicate consistency. Stir-frying the tomatoes separately allows them to release juices that blend with ketchup and sugar, creating a bright sauce familiar in Chinese home cooking.
This dish works well as a quick main or side and pairs well with steamed rice for a simple meal. Variations can include adjusting sugar based on tomato sweetness, or thickening the sauce slightly with cornstarch slurry to preference.
The recipe notes recommend using homegrown, sweeter tomatoes for a better flavor and advise against overcooking eggs to prevent toughness. Ketchup brands vary, so taste and adjust sugar as needed for balance.
Ingredients
- 3 tomato medium size
- 5 egg
- 1 tick green onion
- ¼ cup ketchup
- 2 tablespoons sugar (can be less depends on the sweetness of tomatoes)
- ¼ teaspoon salt
- 1 tablespoon vegetable oil

- Crack 5 eggs in a bowl.
- Then, beat the eggs.
- Pour ½ tablespoon vegetable oil in a non-stick pan and turn on medium-high and add beaten eggs.
- Cook it just like scrambled eggs and remember don’t cook too long. Then, set them aside.
- After that, pour ½ tablespoon vegetable oil, add tomatoes and stir fry for a little bit.
- Next, add ¼ cup ketchup, 2 tablespoons sugar, ¼ teaspoon salt and stir fry for a minute or two.
- Turn off the fire. Then, add the scrambled eggs and top with green onion.
Notes
- Using garden-fresh tomatoes can reduce added sugar needs due to their natural sweetness.
- Avoid overcooking the eggs to keep them tender and moist.
- Adjust sugar quantity based on ketchup brand and tomato sweetness to achieve desired sauce flavor.
- To increase sauce volume and thickness, add water and cornstarch slurry, then adjust seasoning accordingly.
