Chipotle Black Bean Stew
Description
Chipotle Black Bean Stew is prepared by slowly softening onion and garlic in olive oil, then seasoning with sea salt, pepper, cumin, paprika, and oregano. Chipotle paste and tomato puree add deep smoky flavor and richness. Canned black beans and plum tomatoes are added along with vegetable stock and simmered to meld the flavors and thicken the stew.
The stew finishes with fresh lime juice and chopped cilantro to introduce acidity and fresh herbal notes that balance the smoky heat. The texture includes whole beans for body and chunkiness, though mashing some beans to thicken the stew is optional.
This stew makes a satisfying vegetarian meal starter or a side that pairs well with rice or bread. Adding feta cheese on top can introduce extra creaminess and saltiness, and a dollop of yogurt or crème fraîche helps temper spiciness when needed.
For best results, draining and rinsing canned beans helps reduce excess sodium and can improve texture. Use a heavy-based pan to cook evenly.
Ingredients
- 1 tablespoon olive oil
- 1 onion finely chopped
- 2 garlic crushed, clove
- 1 pinch sea salt
- 1 pinch black pepper
- 0.5 teaspoon cumin
- 0.5 teaspoon paprika
- 0.5 teaspoon oregano dried
- 2 tablespoon chipotle paste
- 2 tablespoon tomato puree
- 470 g black beans canned; drained weight; rinsed
- 800 g plum tomatoes canned
- 75 ml vegetable stock
- 1 lime (juice only)
- 5 g cilantro chopped, fresh
Instructions
- Heat 1 tablespoon Olive oil in a large pan and add 1 Onion and 2 Garlic clove. Cook on low for 3-4 minutes, until softened.
- Add 1 pinch Sea salt and ground black pepper, 0.5 teaspoon Cumin, 0.5 teaspoon Paprika, 0.5 teaspoon Dried oregano, 2 tablespoon chipotle paste and 2 tablespoon Tomato puree and stir into the onions.
- Add 800 g Plum tomatoes, 470 g Black beans and 75 ml Vegetable stock and stir well. Simmer for 15 minutes.
- Stir in the juice of 1 Lime and 5 g Fresh coriander (cilantro) and serve.
Notes
- Use a large, heavy-based pan for even cooking of the stew.
- Drain and rinse canned black beans before adding for better texture and flavor control.
- Add crumbled feta cheese on top for a creamy, salty contrast.
- If the stew is too spicy, serve with a spoonful of Greek yogurt or crème fraîche to cool it.
- Optionally mash some beans to thicken the stew, although whole beans provide more texture.
