  • 1 tablespoon vegetable oil
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • 4 pounds pork roast such as pork shoulder or pork butt
  • 1 cup chicken broth
  • 2 bay leaf
  • 2 teaspoons thyme fresh leaves
  • 2 teaspoons juniper berries

Instructions

  1. Heat the oil in a large pot over medium high heat.
  2. Season the pork roast with the salt and pepper.
  3. Place the pork in the pot. Cook on both sides for 4-5 minutes or until golden brown.
  4. Transfer the pork to a slow cooker. Add the chicken broth, bay leaves, thyme and juniper berries.
  5. Cover and cook for 8 hours on low heat.
  6. Uncover the slow cooker and discard the juniper berries and bay leaves.
  7. Shred the pork in the slow cooker with two forks.
  8. Serve as-is, or place the shredded pork on a sheet pan lined with cooking spray. Spoon 1/4 cup of the cooking liquid over the pork. Broil for 3-4 minutes or until the pork pieces have crispy edges.
