Chipotle Chicken Recipe

This Chipotle Chicken Recipe uses boneless, skinless chicken thighs coated with a blended rub of chipotle in adobo sauce, ancho chile powder, cumin, oregano, garlic, salt, and pepper. The seasoning mix adds smoky, spicy, and earthy flavors to the chicken. Cooking can be done in a skillet, on a grill, or air fryer, leading to juicy chicken with a flavorful crust. The recipe allows for marinating to deepen flavor.

Description

The dish combines trimmed boneless chicken thighs seasoned with kosher salt, freshly ground pepper, and a spice rub made of minced garlic, chipotle in adobo sauce, ancho chile powder, cumin, and dried oregano. This mix imparts smoky heat with herbaceous undertones.

The chicken is cooked in a skillet or grilled, gaining a browned crust while staying juicy inside. The recipe notes the option to air fry at 400°F for a convenient alternative. Cooking to an internal temperature of 165°F ensures safety and tenderness.

The use of chipotle and ancho chile powders produces a deep, smoky flavor profile that distinguishes this chicken. This preparation is flexible for various meal settings, from casual dinners to meal prep.

Marinating the chicken in the spice rub overnight intensifies flavor but it can also be cooked shortly after application. Leftover chipotle adobo sauce can be frozen for later use.

Ingredients

Servings
  • 1 1/2 pounds chicken thigh trimmed of fat (about 8 thighs, boneless, skinless
  • 1 1/4 teaspoons kosher salt (and fresh ground black pepper, to taste)
  • 2 cloves garlic (minced or crushed)
  • 1/2 tablespoon chipotle in adobo sauce (or 1 full tbsp to make it spicier, from 1 can*)
  • 1 teaspoon ancho chile powder
  • 1 teaspoon cumin ground
  • 1 teaspoon oregano dried

Instructions

  1. Season Chicken: Season the chicken thighs with salt and pepper on both sides.
  2. Preheat a large skillet or griddle over medium-high heat and spray with oil.
  3. Preheat your grill or grill pan to medium-high heat. Grease the grill grates or grill pan with oil to prevent sticking.
  4. Preheat your air fryer to 400°F. Place the seasoned chicken thighs in a single layer in batches as needed in the air fryer basket.
  5. In a mixing bowl, combine the minced garlic, chipotle in adobo sauce, ancho chile powder, ground cumin, and dried oregano. Rub the spice mixture evenly over the chicken thighs, making sure they are thoroughly coated. Let them sit a few minutes to let the flavor set in. You can cook right away or refrigerate as long as overnight, the longer the more flavorful!
  6. Place the chicken thighs in the skillet and cook for about 6 minutes per side or until browned on the outside and the inside reaches an internal temperature of 165°F.
  7. Place the chicken thighs on the grill or grill pan and cook for approximately 6-8 minutes per side, or until they are fully cooked and reach an internal temperature of 165°F.
  8. Cook the chicken for 14-15 minutes, flipping them halfway through to ensure even cooking. Check the internal temperature with a meat thermometer to confirm it has reached 165°F.
  9. Remove the chicken from the skillet and let it rest for a few minutes before serving. This will help the juices redistribute for maximum flavor. Slice it up and serve in tacos, rice bowls, burritos, etc.
  10. Once cooked, remove the chicken from the heat and let it rest for a few minutes before serving. Resting allows the flavors to meld together and the juices to redistribute. Slice it up and serve in tacos, rice bowls, etc.
  11. Once cooked, transfer the chicken thighs to a plate and let them rest for a few minutes before serving. This step ensures that the chicken remains juicy and flavorful. Slice it up and serve in tacos, rice bowls, etc.

Notes

  • Freeze any unused chipotle in adobo sauce for future recipes.
  • Marinate chicken thighs as long as overnight to develop more pronounced flavors, though cooking immediately is also fine.
