Chipotle Fajita Veggies Recipe

Report
Chipotle Fajita Veggies combine sliced green bell pepper and red onion sautéed in olive oil with dried oregano, salt, and black pepper, cooked until softened and caramelized. The vegetables develop a tender texture with a slight char, suitable as a flavorful side or fajita filling. The seasoning is simple but effective, highlighting the natural sweetness of the vegetables enhanced by gentle cooking.

Description

This recipe involves slicing fresh green bell pepper and red onion, then cooking them in hot oil over medium heat with oregano and seasoning. The process softens the vegetables and encourages caramelization, which intensifies their flavor without overpowering the dish.

The choice of olive or neutral oil supports a balanced sauté, while dried oregano adds a subtle herby note. Finishing with extra salt and pepper ensures the seasoning suits personal taste. Covering the skillet while cooking can help speed softening by trapping heat.

These fajita veggies can be served warm alongside proteins or as a filling for tortillas. They store well in an airtight container for several days and reheat quickly in a microwave. The simplicity of the preparation makes it a convenient staple for meal prep.

Ingredients

Servings
  • 1 large green bell pepper
  • 1 medium red onion
  • 2 tbsp olive oil or other neutral oil
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp oregano dried

Instructions

  1. Start by preparing the vegetables. Cut off the top and bottom of the red onion and peel off the exterior skin. Slice the onion in half and then in equal vertical cuts.
  2. Slice the green bell pepper into thin slices. The easiest way to do this is to cut the pepper from the bottom (upside down); the seeds will stay mostly within the stem.
  3. Heat a large skillet (cast-iron works great if you have one) to medium heat. Add the oil and allow it to come to a sizzle. Add the sliced green peppers and onion. Sprinkle the seasonings on the vegetables.
  4. Sauté for 8-10 minutes, or until the vegetables have softened and caramelized.
  5. Add more salt and pepper to taste if desired. Serve and enjoy!

Notes

  • Cover the skillet with a lid as needed to help the vegetables soften more quickly by trapping heat.
  • Store cooked vegetables in an airtight container for up to five days; reheat in the microwave for 30-60 seconds before serving.
