  • ¾ cup avocado oil or extra virgin olive oil
  • 6 tablespoons red wine vinegar
  • 3 tablespoons honey
  • ½ teaspoon dried oregano
  • 1-½ teaspoons kosher salt
  • ½ teaspoon ground black pepper
  • 2 chipotle peppers in adobo sauce plus 1 tablespoon of the sauce to taste
  • 2 small garlic cloves , roughly chopped

  1. Combine all of the ingredients in a food processor or blender and process until smooth. Taste and adjust seasoning if needed. Serve the Chipotle Honey Vinaigrette immediately or store it in an airtight container in the refrigerator for up to 1 week.
