Pico de gallo:

  • 2 Roma tomato chopped
  • 1 jalapeño seeded and diced (use gloves for this!, small
  • 3 Tablespoons green onion chopped
  • 1/4 cup cilantro chopped
  • lime juice juice from 1 large lime
  • 1/4 teaspoon salt

Toppings:

  • romaine lettuce shredded
  • avocado sliced
  • sour cream
  • cilantro chopped
  • lime fresh squeezed juice

Instructions

  1. Prepare pork carnitas according to directions HERE.
  2. To make pico de gallo, combine tomatoes, jalapeño, green onions, cilantro, lime juice, and salt in a small bowl. Refrigerate until ready to use.
  3. To serve, place 2/3 cup rice in each bowl, then top with 3/4 cup cooked pork carnitas. Spoon homemade pico de gallo over the top, then finally add any additional desired toppings.
