Ingredients

  • 1 pkg extra firm tofu cut into small pieces
  • 1 tbsp oil for frying
  • ½ cup vegetable broth
  • ¼ cup salsa
  • 1 small onion peeled and halved
  • 1 green pepper halved and seeded
  • 1 lime juiced
  • 1 Chipotle chili minced, or more to taste
  • 1 tbsp adobo sauce
  • 1 tbsp tomato paste
  • 1 tbsp maple syrup
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp chili powder
  • 1 tsp salt
  • ½ tsp pepper

Instructions

  1. In a large skillet, heat oil over medium high.
  2. Then add tofu and brown on all sides, using a wooden spoon to crumble it into smaller pieces as in cooks (about 5–6 minutes).
  3. While tofu is cooking, add the vegetable broth, salsa, onion, green pepper, lime juice, chipotle chilis, adobo sauce, tomato paste, maple syrup, cumin, oregano, chili powder, salt, and pepper to a blender or food processor
  4. Blend until desired consistency. (I like mine with just a little bit of texture but you can get it smooth if you keep blending.)
  5. Once the tofu has browned, add the sauce.
  6. Allow to simmer for 10 minutes.
  7. Serve warm with rice if desired.
