Ingredients

  • 3 pounds flank steak or sirloin
  • 2 chipotle peppers in adobo sauce plus 2 tablespoons sauce
  • 1 Tablespoon garlic minced
  • 2 tablespoons vegetable oil
  • 2 tablespoons lime juice
  • 1 tablespoon cumin ground
  • 1 tablespoon oregano dried
  • 2 teaspoons black pepper
  • 2 teaspoons salt

Instructions

  1. In a blender, combine the chipotle peppers, adobo sauce, garlic, oil, lime juice, cumin, oregano, pepper, and salt. Blend until smooth to create the marinade.
  2. Place the steak in a large zip-top bag and pour in the marinade. Seal the bag and turn to coat evenly. Refrigerate for at least 4 hours or up to 12 hours.
  3. Remove the steak from refrigerator 30 minutes before cooking to allow it to come to room temperature.
  4. Preheat the grill to high heat. Remove steak from marinade, discarding excess marinade.
  5. Grill steak for 5-6 minutes per side for medium-rare, or until desired doneness.
  6. Let rest for 10 minutes, then slice and chop against the grain into small bite size pieces.
  7. Serve over rice, tortillas or on a salad. Enjoy!

Notes

  • Marinating for the full 12 hours intensifies the chipotle flavor, but 4 hours will still provide a good amount of flavor.
  • Chipotle uses Mexican Oregano but Italian Oregano tastes great as well and is usually more readily available but either will work in this recipe.  
  • Make sure your grill is fully preheated to achieve a really good sear.
  • Refrigerate any leftovers in an airtight container for up to 5 days.
