Chipotle Tomatillo Green-Chili Salsa

The Chipotle Tomatillo Green-Chili Salsa blends roasted tomatillos, tomatoes, jalapeños, and red onion with garlic, cumin, oregano, and fresh citrus juices. Roasting the vegetables brings a slight char and depth to the salsa. The result is a smoky, bright, and mildly spicy fresh salsa, balanced by the acidity from lemon and lime juice and fresh cilantro.

Description

This salsa involves roasting halved tomatillos, tomatoes, whole jalapeños (seeds removed for milder heat), and red onion wedges at a high temperature until they develop charred spots, enhancing the natural sweetness and adding a smoky complexity. After roasting, these ingredients are combined with garlic cloves, kosher salt, black pepper, ground cumin, dried oregano, lemon juice, lime juice, and fresh cilantro.

The mixture is pulsed briefly in a food processor or blender to retain some chunkiness rather than pureeing into a smooth sauce. The salsa captures the brightness of tomatillos with the warmth of chipotle-like heat from jalapeños paired with aromatic spices and fresh herbs. It can complement Mexican dishes, grilled meats, or be enjoyed as a flavorful dip.
