Chocolate Almond Bark

Chocolate Almond Bark is a treat made by roasting almonds coated in maple syrup and salt, then combining them with a smooth chocolate mixture of coconut oil, cocoa powder, and maple syrup. Topped with dried fruit and coconut flakes, it sets in the freezer to form a firm, easy-to-break bark with contrasting textures and flavors.

Description

This Chocolate Almond Bark starts with roughly chopped almonds roasted in maple syrup and sea salt to deepen their flavor and add a sweet-savory crunch. The chocolate base is created by melting coconut oil and whisking in unsweetened cocoa powder alongside maple syrup, resulting in a smooth, lightly sweetened dark chocolate replica made without dairy or refined sugars.

The chocolate mixture incorporates half of the roasted almonds before being spread out and topped with the remaining almonds, chopped dried fruit, and coconut flakes for texture variety. After chilling in the freezer, the bark solidifies and breaks into bite-sized pieces that combine rich cocoa flavor with nutty crunch and fruity brightness.

This bark is convenient for snacking, gifting, or serving alongside coffee or tea. It requires no baking beyond almond roasting and sets quickly in the freezer, making it an accessible homemade candy option.

Ingredients

Servings

For the roasted almond:

  • ½ cup almonds roughly chopped
  • 3 tablespoons maple syrup
  • Pinch of sea salt

For the chocolate bark:

  • ½ cup coconut oil
  • ½ cup cocoa powder unsweetened
  • ¼ cup maple syrup
  • ¼ cup dried fruit chopped *I used cranberry and apricot
  • 3 tablespoons coconut flakes

Instructions

  1. To roast the almonds: Pre-heat the oven to 350 degrees. Cover a baking sheet with parchment paper. Spread almond over the sheet and drizzle it with maple syrup. Sprinkle it with sea salt. Give it a toss and roast in the oven for 8-10 minutes. Let it cool on the counter.
  2. Spread another baking sheet (or a casserole dish) with parchment paper and set it aside.
  3. To make the chocolate bark, heat coconut oil in a pan just until it is melted. Transfer it into a bowl. Whisk in the cocoa powder and maple syrup. Mix until smooth.
  4. Mix in the half of the roasted almond mixture into the chocolate. Spread the mixture onto the sheet. Sprinkle it with the rest of the almonds, dried fruit, and coconut flakes.
  5. Place it in the freezer for 20-30 minutes.
  6. Break the chocolate bark into small pieces and serve.
