Chocolate Almond Clusters

Chocolate Almond Clusters combine whole almonds coated in melted dark or semi-sweet chocolate, chilled to set into simple, bite-sized treats. The contrast of crunchy nuts and smooth chocolate creates a pleasing texture and rich flavor, optionally enhanced by a light sprinkle of sea salt.

Description

This recipe starts by melting chocolate in short bursts until smooth, then coating two cups of almonds evenly. Spoonfuls of the coated almonds are dropped onto parchment-lined trays and optionally sprinkled with sea salt before chilling in the fridge to harden. This method preserves the roasted flavor of the almonds whether they start plain or roasted, and the chocolate forms a glossy, firm shell around each cluster.

The finished clusters have a satisfying crunch from the almonds under a sweet, dense chocolate coating. The cold setting step firms the chocolate quickly without the need for tempering equipment, making these clusters accessible for home cooks.

They can be served as simple snacks, dessert nibbles, or treats for entertaining. Their firm texture holds well at room temperature for some time but is best stored in a cool place.
