Chocolate and Matcha Chia Pudding Parfaits
Description
The recipe prepares two puddings separately. Chocolate pudding is created by combining cocoa powder and chia seeds, then whisking in almond milk, maple syrup, and vanilla extract before refrigerating overnight. Matcha pudding is similarly prepared by whisking matcha powder with chia seeds, almond milk, maple syrup, and vanilla, then chilling overnight to thicken.
The parfaits are assembled by layering spoonfuls of chocolate pudding and matcha pudding alternately in glasses or jars, creating a mosaic of dark and green layers. A topping of chopped dark or dairy-free chocolate adds texture and richness. The resulting dessert or snack offers a creamy, lightly sweetened texture balanced between earthy matcha and chocolate flavors.
The pudding can be served immediately after assembling or stored covered in the refrigerator for several days, retaining a fresh texture suitable for make-ahead meals or snacks.
