Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder unsweetened
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 -4 banana ripe, 3 large bananas or 4 medium sized bananas
  • ½ cup butter melted and slightly cooled
  • 2 egg room temperature, beated, large
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup semisweet chocolate chips divided

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and  spray a 5×9 loaf pan with non-stick cooking spray.
  2. In a medium size bowl, whisk together the flour, unsweetened coconut powder, baking soda and salt.  Set aside.
  3. Peel the bananas and mash them with a fork in a large mixing bowl.
  4. Stir in melted butter, eggs, sugar and vanilla extract until smooth.
  5. Then gently stir the dry ingredients into the wet ingredients until just combined.  Be careful not to over mix the batter.
  6. Gently stir in approximately 3/4 cup of the chocolate chips.
  7. Pour the batter into the prepared loaf pan.  Sprinkle the remaining chocolate chips on top.
  8. Bake for 50-65 minutes until a toothpick inserted into the center of the bread comes out clean.
  9. Let the bread cool on a wire rack for 15- 20 minutes in the pan.
  10. Carefully remove the bread from the pan and let it cook completely on the wire rack.
  11. Then the bread is ready to slice, serve and enjoy!

Notes

  • Store any leftovers in an airtight container for up to 4-5 days. 
  • Make sure to not put the toothpick into a melted chocolate chip when testing the bread for doneness. 
  • You can use frozen bananas for this recipe.  Make sure to defrost them out completely before using them in this recipe.
