Chocolate Berry Cups are bite-sized treats made by melting chocolate chips and mixing in chopped pecans, then filling mini muffin cups lined with aluminum liners. Each cup is topped with fresh raspberries and blackberries pressed into the chocolate before it sets, creating a crisp, nut-studded shell surrounding juicy berries. Description

The recipe starts by melting chocolate chips gently in a microwave, stirring frequently to ensure smooth melting. Finely chopped pecans are folded into the melted chocolate to add crunch and nutty flavor. The mixture is spooned into prepared mini muffin cups lined with sturdy aluminum liners which support the soft chocolate as it cools.

  • 12 oz chocolate chips
  • ¼ cup pecans finely chopped
  • ½ cup raspberry
  • ½ cup blackberry

Instructions

  1. Put chocolate chips in a microwave-safe bowl and melt it by heating it in the microwave in 30-second increments, stirring in between, until chocolate is smooth and melted.
  2. Stir pecans into the melted chocolate
  3. Line a 12 cup mini muffin pan with aluminum liners
  4. Fill each cup with the melted chocolate
  5. Top each chocolate-filled cup with berries, pressing them into the chocolate so they are partly submerged
  6. With a spoon, drizzle any remaining chocolate over the berries
  7. Refrigerate 15 minutes or until chocolate is firm
  8. Store the chocolates in an airtight container in the fridge up to 3 days

Notes

  • Using heavier aluminum liners is recommended over paper liners as they better support the chocolate for easier filling and removal.
  • Store the finished chocolate berry cups in an airtight container in the refrigerator for up to 3 days.
