Description
This recipe uses a food processor to finely chop and grind walnuts, then combines them with pitted Medjool dates, pumpkin puree, cocoa powder, salt, and vanilla extract. The mixture is processed until smooth and combined, then portioned into golf-ball-sized spheres and rolled in reserved walnuts for texture contrast and presentation.
The balls offer a chewy, moist interior with nutty crunch outside. The pumpkin puree adds moisture and a subtle earthiness, while cocoa powder provides richness. The use of natural sweeteners avoids refined sugars.
They can be served immediately or stored refrigerated or frozen for longer keeping. Variations allow swapping walnuts for pecans or almonds, or using seed alternatives for nut allergies. Pumpkin can be replaced by mashed banana or other fruit purees. Dates may be substituted with prunes or smaller dates with adjusted quantity.
Ingredients
- 3/4 cup walnuts (2.6 oz total)
- 10 date Medjool, pitted
- ¼ cup pumpkin puree canned or homemade
- Pinch salt sea salt
- 1/4 cup cocoa powder I used Dutch process, unsweetened
- ½ teaspoon vanilla extract
Instructions
- Place 1/3 cup of the walnuts in a food processor fitted with a metal blade.
- Process until nuts resemble coarse sand. Transfer to a small bowl and set aside.
- Add remaining walnuts to the food processor and process until finely ground.
- Add the dates, pumpkin purée, cocoa powder, salt and vanilla extract and continue to process until ingredients are combined and smooth.
- Using a spoon (or your hands), scoop and roll mixture into 8 equal (golf-ball- size) balls.
- Roll each ball in the reserved walnuts and serve immediately or store in the freezer or the fridge.
Notes
- Walnuts can be substituted with pecans or almonds according to preference.
- For nut allergies, hemp or pumpkin seeds are suitable alternatives.
- Pumpkin puree can be swapped for mashed banana or other fruit purees.
- If Medjool dates are unavailable, use smaller dates but increase quantity slightly or substitute prunes.
- Adding shredded coconut to the mixture is an optional variation.
