Description

The preparation begins by lining an 8x8 pan with parchment paper and layering Club crackers. A caramel mixture is made by boiling butter, sweetened condensed milk, brown sugar, and corn syrup, then simmering it while stirring to thicken. Portions of this hot caramel are poured over successive cracker layers to bind them tightly.

Once all layers and caramel are assembled, chocolate chips are placed on top and covered briefly to melt from the residual heat. This melted chocolate is then spread evenly to create a solid chocolate topping. The bars are refrigerated for one hour to set completely before slicing.

This dessert has a contrast of textures from the crunchy crackers, chewy caramel, and smooth chocolate. Handling the hot caramel carefully is necessary during layer assembly to avoid burns.

  • 54 Club crackers
  • 12 tablespoons butter unsalted
  • 14 ounces sweetened condensed milk
  • 1/2 cup brown sugar , packed
  • 3 tablespoons corn syrup
  • 1 cup semisweet chocolate chips

Instructions

  1. Line an 8x8 pan with parchment paper.
  2. Line a single layer of club crackers.
  3. Add butter, sweetened condensed milk, brown sugar, and corn syrup to a medium saucepan.
  4. Stir well and bring to a boil on medium heat.
  5. Reduce heat to medium-low then cook for 8 minutes, stirring every minute.
  6. Add 1/3 of the caramel mixture to the crackers gently (don't worry if you miss a spot).
  7. Add a second layer of crackers (be VERY careful the caramel is very hot).
  8. Add another 1/3 of the caramel mixture then another layer of crackers and the rest of the caramel mixture.
  9. Top with your chocolate chips and cover with a dishtowel (this keeps the heat in) for 3 minutes.
  10. Spread the chocolate in an even layer over the bars.
  11. Refrigerate for 1 hour until cooled and hardened before cutting into slices.
