This Chocolate Cherry Cake uses a boxed chocolate cake mix blended with eggs, cherry pie filling, and almond or vanilla extract to add a fruity depth to the batter.   • 1 box chocolate cake mix
  • 1 can cherry pie filling
  • 2 egg
  • 1 teaspoon almond extract or vanilla extract

Glaze

  • 5 Tablespoons butter or margarine
  • 1/3 cup milk
  • 1 cup sugar
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350 F.
  2. In a bowl combine the cake mix, eggs, extract and pie filling. Stir to mix thoroughly and get most of the lumps out.
  3. Spray a 13 x 9 inch baking pan with cooking spray. Pour the batter into the band and spread it to the edges.
  4. Bake in the 350 F oven for 25-30 minutes, until the a toothpick in the center of the cake comes out clean.
  5. Set the cake aside and make the glaze while the cake is still warm.
  6. For the glaze combine the sugar, milk and butter in a saucepan. Heat over medium heat until the butter and sugar melt. Bring to a boil and boil for 1 minute.
  7. Take the glaze off the heat and add the chocolate chips. Stir until the chocolate chip melts and the glaze becomes smooth.
  8. Pour the glaze over the still warm cake and use a spatula to spread it all over the top.
  9. Let the cake cool before cutting.

Notes

  • You can add additional cherry pie filling or chocolate chips on top of the cake for more flavor and texture.
