Description
This Chocolate Cherry Cake uses a boxed chocolate cake mix blended with eggs, cherry pie filling, and almond or vanilla extract to add a fruity depth to the batter. The pie filling provides bursts of cherry throughout, moistening the cake. After baking in a 13x9 inch pan until a toothpick inserted in the center comes out clean, the cake is topped with a chocolate glaze while still warm.
The glaze is prepared by melting butter, sugar, and milk together, then boiling briefly before stirring in chocolate chips to create a smooth, glossy topping. This chocolate layer enhances the cake with a sweet, rich flavor and a slightly fudgy texture on top.
After glazing, the cake cools to set before slicing. The result is a moist, tender cake with contrasting fruity cherry pieces and a luscious chocolate coating. You can optionally add extra pie filling or chocolate chips atop the glaze for more intensity. This cake is suitable as a dessert or special occasion treat.
Ingredients
Cake
- 1 box chocolate cake mix
- 1 can cherry pie filling
- 2 egg
- 1 teaspoon almond extract or vanilla extract
Glaze
- 5 Tablespoons butter or margarine
- 1/3 cup milk
- 1 cup sugar
- 1 cup chocolate chips
Instructions
- Preheat the oven to 350 F.
- In a bowl combine the cake mix, eggs, extract and pie filling. Stir to mix thoroughly and get most of the lumps out.
- Spray a 13 x 9 inch baking pan with cooking spray. Pour the batter into the band and spread it to the edges.
- Bake in the 350 F oven for 25-30 minutes, until the a toothpick in the center of the cake comes out clean.
- Set the cake aside and make the glaze while the cake is still warm.
- For the glaze combine the sugar, milk and butter in a saucepan. Heat over medium heat until the butter and sugar melt. Bring to a boil and boil for 1 minute.
- Take the glaze off the heat and add the chocolate chips. Stir until the chocolate chip melts and the glaze becomes smooth.
- Pour the glaze over the still warm cake and use a spatula to spread it all over the top.
- Let the cake cool before cutting.
Notes
- You can add additional cherry pie filling or chocolate chips on top of the cake for more flavor and texture.
