Description

Chocolate Chews are prepared by melting semi-sweet chocolate chips carefully in short bursts to avoid overheating, then incorporating them into a creamed mixture of softened butter and white sugar. Vanilla extract and eggs are added for moisture and aroma.

The dry ingredients, including flour, baking powder, baking soda, and salt, are mixed separately and then gradually folded in to form a cookie dough. Chilling the dough for 30 minutes firms it up, making the dough easier to handle and helping the cookies keep their shape while baking.

Before baking, cookie dough balls are rolled in white sugar to create a lightly sweet, crackly surface. Baking at 350 degrees F results in cookies with a soft, chewy texture and deep chocolate flavor balanced by the sweetness of the sugar coating. Ingredients

  • 1 cup semi-sweet chocolate chips
  • ½ cup butter softened, unsalted
  • 1 cup white sugar
  • 2 egg
  • 1 tsp vanilla
  • 2 cups flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¼ cup white sugar for rolling

Instructions

  1. Place the chocolate chips in a glass bowl then put them into the microwave for 30 seconds. Remove and stir then place back into the microwave for 20 seconds. Remove and stir then place back into the microwave for 10 seconds. Remove and stir until completely melted. If needed, continue cooking for 10-second increments. Be careful not to overcook the chocolate! Set aside.
  2. With a hand mixer, beat the butter and sugar together until creamy.
  3. Add vanilla followed by the eggs, one at a time, until well combined. Fold in the melted chocolate and mix well.
  4. Combine the flour with baking powder, baking soda, and salt until mixed thoroughly.
  5. Gradually add the flour mixture to the butter mixture until combined.
  6. Cover with plastic wrap and place into the refrigerator for 30 minutes to harden a bit.
  7. Preheat the oven to 350 degrees. Line a baking sheet with a silpat mat.
  8. Place 1/4 cup of white sugar into a small bowl. Roll cookie dough into small 1" balls then roll into the sugar to coat completely.
  9. Place onto the prepared baking sheet, about 2 inches apart.
  10. Bake in the preheated oven for about 8-10 minutes, or until the cookies are dry around the edges and cracked on top.
  11. Let the cookies cool on the baking sheet for 10 minutes, then transfer to a rack to cool completely before serving.
  12. Serve with iced cold milk. Enjoy!
