Chocolate Chia Pudding
Description
This pudding starts by whisking together unsweetened almond milk, chia seeds, cocoa powder, pure vanilla extract, maple syrup, and a pinch of salt. After mixing, the mixture is allowed to rest briefly before stirring again to break up any clumps. Then, it is covered and chilled overnight to let the chia seeds absorb the liquid and create a pudding-like texture.
The resulting pudding is thick and creamy with discernible seeds throughout, offering a chocolate flavor balanced by the natural sweetness of maple syrup and a hint of vanilla. The texture can be adjusted by adding more almond milk if it becomes too thick after chilling.
The pudding is served cold and can be garnished with fresh raspberries, chocolate chips, or nuts to enhance both flavor and presentation. This dessert works well as a make-ahead healthy treat or snack.
Ingredients
- 1 ½ cup almond milk plus more as needed, unsweetened or milk of choice
- 6 Tablespoons chia seeds
- 2-3 Tablespoons maple syrup honey or sweetener of choice
- 2 Tablespoons cocoa powder
- ⅛ teaspoon salt
- 1 teaspoon vanilla extract
- raspberry chocolate chips, nuts, fresh, for topping
Instructions
- Add milk, chia seeds, maple syrup, cocoa powder, vanilla and salt to a bowl or mason jar and whisk to fully combine.
- Once the chia pudding mixture is well combined, let it sit for 5 minutes, give it another stir/shake to break up any clumps of chia seeds and cocoa powder
- Cover and put the mixture in the fridge overnight. When ready to serve, stir, adding more milk if it's too thick. Serve with your favorite toppings like raspberries or chocolate chips.
