Chocolate Chia Pudding

Chocolate Chia Pudding combines almond milk, cocoa powder, and chia seeds to create a creamy, rich dessert with a subtle chocolate flavor and a smooth yet slightly textured consistency. Sweetened with maple syrup and flavored with vanilla, it is chilled overnight to thicken. The pudding can be topped with fresh raspberries, chocolate chips, or nuts for added taste and texture.

Description

This pudding starts by whisking together unsweetened almond milk, chia seeds, cocoa powder, pure vanilla extract, maple syrup, and a pinch of salt. After mixing, the mixture is allowed to rest briefly before stirring again to break up any clumps. Then, it is covered and chilled overnight to let the chia seeds absorb the liquid and create a pudding-like texture.

The resulting pudding is thick and creamy with discernible seeds throughout, offering a chocolate flavor balanced by the natural sweetness of maple syrup and a hint of vanilla. The texture can be adjusted by adding more almond milk if it becomes too thick after chilling.

The pudding is served cold and can be garnished with fresh raspberries, chocolate chips, or nuts to enhance both flavor and presentation. This dessert works well as a make-ahead healthy treat or snack.
