Description
This pudding blends cacao powder with maple syrup, vanilla extract, and milk before adding chia seeds. The mixture rests undisturbed for 15 minutes to allow the seeds to start gelling, then is stirred again for even dispersion. It is refrigerated for at least four hours or overnight, ensuring the seeds fully hydrate and create a creamy, thick consistency.
The final texture is smooth yet slightly textured from the seeds, with a rich chocolate taste balanced by natural sweetness from the maple syrup. Toppings like raspberries, chocolate shavings, coconut whipped cream, seeds, or nuts add freshness and contrast.
For best results, use fresh chia seeds, as older seeds may not thicken properly. A tip for presentation includes freezing washed, dry berries to achieve a frosted look as they thaw on top of the pudding.

- 2 tablespoons cacao powder
- 2 tablespoons maple syrup

- 1 cup milk dairy or dairy-free

Instructions
- In a medium-size bowl, add the cacao powder, maple syrup, vanilla extract, dairy-free milk and chia seeds. Whisk together until all ingredients are combined.
- Leave the mixture in the bowl for 15 minutes without stirring for the chia seeds to gel. After 15 minutes, whisk it together one more time. Cover the bowl and place it in the refrigerator overnight or a minimum of 4 hours.
- Remove the chocolate chia seed pudding from the fridge and stir together with a spoon. Serve into small dessert sized glasses. Top with your favorite fruit, chocolate shavings or other garnishes.
Notes
- Use fresh chia seeds to ensure proper thickening; older seeds may fail to gel.
- Freeze washed, dry berries for a frosted appearance when serving.
