Description
The bars start with a graham cracker crust made from crumbs, melted butter, and sugar, pressed into a baking pan and prebaked briefly to set the foundation. The cheesecake layer is prepared by mixing softened cream cheese with sugar, an egg, and vanilla extract until smooth and spread over the crust evenly. On top, refrigerated cookie dough is crumbled, allowing it to bake into a soft and slightly golden layer. Baking at 325°F for about 30 minutes produces firm bars with distinct layers.
The resulting bars combine the familiar flavors of cheesecake and chocolate chip cookies in a portable form. They can be cut into squares to serve and are ideal for dessert plates or casual snacking.
Ingredients
CRUST
- 2 cups graham cracker crumbs
- ½ cup butter melted, unsalted
- 1 tablespoons white sugar
CHEESECAKE LAYER
- 8 ounces cream cheese , room temperature
- ⅓ cup white sugar
- 1 egg , room temperature
- 1 teaspoon vanilla extract
COOKIE TOPPING
- 8 ounces Cookie Dough refrigerated
Instructions
- Preheat the oven to 325°F. Prepare a 9x9 baking pan by spraying with non-stick cooking spray and lining with parchment paper.
Make Graham Cracker Crust:
- In a small bowl, prepare the graham cracker crust by using a fork to combine the graham cracker crumbs, butter and sugar. Add more melted butter if the crust won't hold together.
- Press graham cracker crust mixture into the bottom of the prepared pan.
- Bake for five minutes in the preheated oven.
Make Cheesecake Filling:
- In the bowl of a stand mixer fitted with the paddle attachment or a large mixing bowl with an electric mixer, prepare the cheesecake filling by beating the cream cheese well. Add the sugar, egg and vanilla until fully combined.
- Spread the cheesecake layer over the graham cracker crust.
Cookie Layer:
- Crumble the cookie dough over the cheesecake layer. It doesn't need to be perfectly smooth, it will flatten while baking.
- Bake for 30 minutes or until the cookie layer is golden brown and the bars are cooked through.
- Allow to cook before lifting the parchment out of the pan and slicing.
