Chocolate Chip Coconut Bars

Chocolate Chip Coconut Bars feature a buttery, brown sugar-flavored crust topped with a creamy coconut filling studded with chocolate chips. Baking the base before adding the sweet filling ensures a crisp bottom while the layered coconut and chocolate create a chewy, rich bar.

Description

These bars start with a crust made from flour, brown sugar, and melted butter pressed into a pan and lightly baked until golden. The filling is prepared by whisking together flour, brown sugar, eggs, sweetened condensed milk, vanilla, and melted butter. Chocolate chips and shredded coconut are folded into the filling, which is poured over the cooled crust. The bars bake further at a lower temperature until set and lightly browned on top. The combination results in a textured dessert with a soft, dense center and a tender base.

The mix of coconut and chocolate chips adds moistness and bursts of flavor throughout. Lining the pan with parchment paper aids removal and cleanup. These bars can be served as a sweet treat or dessert.

Using dark chocolate chips instead of semi-sweet can provide a deeper cocoa flavor.

Ingredients

Servings

Crust

  • 2 cups flour
  • 1 cup brown sugar
  • 1 cup butter

Filling

  • 1/2 cup flour
  • 1/4 cup brown sugar
  • 3 egg
  • 1 can sweetened condensed milk 14 ounce
  • 2 teaspoons vanilla
  • 1/4 cup butter
  • 1 cup chocolate chips
  • 4 cups coconut divided, sweetened shredded

Instructions

  1. Preheat the oven to 350 F.
  2. Line a 13x9 inch baking pan with parchment paper so that the paper extends up the sides of the pan.
  3. In a medium mixing bowl, combine 2 cups of flour and 1 cup of brown sugar and stir to mix well.
  4. Melt 1 cup of butter in the microwave. Stir the melted butter into the flour mixture until well combined.
  5. Press the crust mixture into the bottom of the prepared baking pan. Bake for 12-15 minutes until lightly browned. Remove from the oven and cool for 10 minutes.
  6. Reduce the oven temperature to 325 F degrees.
  7. To make the filling in a large bowl whisk together ½ cup of flour, ¼ cup of brown sugar, 3 eggs, 1 can of sweetened condensed milk, and 2 teaspoons of vanilla extract.
  8. Melt ¼ cup of butter in the microwave and then stir into the filling mixture.
  9. Add the 1 cup of semisweet chocolate chips and 3 cups of the shredded coconut to the filling mixture and stir well.
  10. Pour the filling mixture over the baked crust. Sprinkle the top with the remaining 1 cup of coconut.
  11. Bake the coconut bars as 325 F for 30 minutes, until golden brown on top.
  12. Cool the bars in the pan for 10 minutes, then carefully remove from the pan by lifting the sides of the parchment paper and moving the bars to a cooling rack.
  13. Cool completely to room temperature, then cut into bars and serve.

Notes

  • Dark chocolate chips can be used instead of semi-sweet for a richer chocolate taste.
