Chocolate Chip Cookie Cake

The Chocolate Chip Cookie Cake blends the chewy richness of a cookie with the size and shape of a cake. It uses classic cookie ingredients like butter, brown sugar, and chocolate chips, baked in a cake pan for a thick, tender center with slightly crisp edges. The recipe also includes options for both chocolate and vanilla buttercream frostings, adding a creamy sweet topping that complements the cookie's texture. Baking time varies depending on pan size, allowing control over softness or a more set texture.

Description

Chocolate Chip Cookie Cake combines cookie dough ingredients baked in a cake pan for a large, shareable dessert. The dough includes softened butter, sugars, eggs, vanilla, flour, cornstarch, baking soda, salt, and a generous amount of chocolate chips. The cornstarch helps create a soft crumb, and the baking soda leavens the batter for a tender chew. After mixing, it spreads into a greased 8 or 9-inch pan and bakes until golden and set in the center.

The cake develops a texture similar to a giant chocolate chip cookie with a blend of crisp edges and a moist interior. Cooling and inverting it onto a platter prevents sticking and makes for a neat presentation. The included buttercream frostings—chocolate or vanilla—can be spread over the cooled cake, offering extra sweetness and richness.

This dessert is suitable for casual sharing or special occasions where serving a cake-like cookie appeals. The frosting allows personalization and decoration if desired, making it versatile enough for celebrations or snacks.

A note suggests doubling the frosting if extensive decorating is planned to ensure adequate coverage and decorative effect. Baking times should be adjusted for pan shape and thickness, with foil used if over-browning occurs.

Ingredients

Servings
  • 12 Tablespoons butter (softened)
  • 1 cup brown sugar
  • 1/4 cup sugar
  • 1 egg
  • 1 egg yolk
  • 2 teaspoons vanilla
  • 1 3/4 cup flour
  • 1 teaspoon cornstarch
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 1/2 cups chocolate chips

Chocolate Buttercream Frosting:

  • 1/2 cup butter softened
  • 1/3 cup cocoa powder
  • 1 3/4 cup powdered sugar
  • 1-2 Tablespoons cream or milk

Vanilla Buttercream Frosting:

  • 1/2 cup butter softened
  • 2 cups powdered sugar
  • 1-2 Tablespoons cream or milk
  • 2 teaspoons vanilla

Instructions

  1. Preheat oven to 350 degrees. Spray 8 or 9-inch cake pan or springform pan with nonstick cooking spray.
  2. In a large mixing bowl, cream butter, brown sugar, and sugar for 3-4 minutes scraping the sides of the bowl often, until light and creamy.
  3. Add egg, egg yolk, and vanilla. Mix for 1 minute.
  4. Stir in flour, cornstarch, baking soda, and salt, just until combined. Stir in chocolate chips.
  5. Spread cookie dough into cake pan.
  6. Bake for 20-26 minutes, depending on the depth of the pan. If using a large, thin pizza pan, reduce baking time for 15-18 minutes. If the cookie is browning too much, cover with foil halfway through baking time.
  7. Check for doneness by inserting a toothpick in the center of the baking pan. Set aside to cool.
  8. Once it is cooled, run a knife along the sides of the baking pan. Invert onto flat, larger serving platter or plate. May use a heavy object, such as a rolling pin, to bang on the bottom of the pan, once it is inverted to help release the cookie from the pan.
  9. To make frosting: cream butter for 2 minutes. Add cocoa powder (if making chocolate frosting), powdered sugar, vanilla, and cream.
  10. Using a cake decorator set, frost the cooled cookie, according to preference.
  11. Cut into wedges to serve.

Notes

  • Consider doubling the frosting quantity when decorating extensively to have enough for coverage and design.
  • Adjust baking time based on pan size and thickness; use foil halfway through baking if cookie cake begins to brown too much.
