Chocolate Chip Guinness Cookies

Chocolate Chip Guinness Cookies are rich cocoa and Guinness stout cookies that combine both white and dark chocolate chips for multi-dimensional chocolate flavor. The Guinness is reduced with brown sugar to intensify its sweetness and flavor before being mixed into a dough made from cocoa, flour, and baking agents. The result is a fudgy, slightly chewy cookie with a subtle stout undertone.

Description

These cookies start with simmering Guinness stout and brown sugar together until reduced and syrupy, concentrating the flavors. The dry ingredients, including flour, cocoa powder, baking powder, baking soda, and salt, are mixed separately. Butter, white sugar, and brown sugar are creamed together, then eggs and vanilla are added for moisture and richness.

The dry ingredients and Guinness reduction are combined into the wet mixture, folding in white and dark chocolate chips for a balance of creamy and intense chocolate notes. After forming dough balls, the cookies bake at a low temperature for 12-15 minutes to retain moistness and develop fudgy centers with slightly crisp edges.

These cookies offer a complex chocolate experience enhanced by the stout's subtle bitterness and maltiness, making them a unique variation among chocolate chip cookies.
