  • 2 3/4 cup flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter melted, or margarine
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 egg
  • 1/2 cup milk
  • 2 teaspoons vanilla extract
  • 12 ounce mini chocolate chips package
  • sugar optional, coarse

Instructions

  1. Preheat oven to 375 F. Spray muffin tray or line with liners.
  2. Mix together dry ingredients, flour through salt and set aside.
  3. Mix melted butter and sugars. Stir until well blended.
  4. Add eggs, one at a time. Mix well.
  5. Slowly mix it milk and vanilla.
  6. Gradually add dry ingredients, stirring only until mixed in (do not over mix).
  7. Mix in chocolate chips.
  8. Fill muffin cups 3/4 full. Sprinkle with coarse sugar, if using.
  9. Bake 15-18 minutes or until lightly golden brown and knife inserted comes out clean.
  10. Serve warm.

Notes

  • Freeze leftover muffins and warm in the microwave before serving to restore freshness.
