Chocolate Chip Pudding Cookies
Description
This cookie dough blends creamed butter with sugars and vanilla pudding mix to retain moisture and provide a smooth texture. Eggs and vanilla extract are added before folding in flour, baking soda, baking powder, and salt to achieve balanced leavening. Semisweet chocolate chips create pockets of melted chocolate throughout. Cookies are portioned and baked at 350°F until edges are set but centers remain soft to keep them tender.
The finished cookies offer a pleasant chew with a soft center and lightly crisp edges, enhanced by the vanilla pudding's moisture retention. They can be enjoyed fresh or stored for later snacking.
Using salted butter can add subtle seasoning, and fluffing flour before measuring prevents dryness. Avoid overbaking to keep the desired soft texture intact.
Ingredients
- 1 cup butter softened
- 3/4 cup brown sugar packed
- 1/4 cup granulated sugar
- 3.4 ounce vanilla pudding mix instant, package
- 2 egg large
- 1 teaspoon vanilla extract
- 2 ½ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 ½ cups semisweet chocolate chips
Instructions
- Preheat oven to 350 F. Line baking sheets with parchment paper or silicone baking mats. Set aside.
- In a large bowl, cream together the butter and sugars.
- Beat in the instant pudding mix until blended.
- Stir in the eggs and vanilla.
- Add the flour, baking soda, baking powder, and salt; stir in just until combined.
- Stir in the chocolate chips.
- Drop cookies by 1.5 tablespoons onto prepared baking sheets.
- Bake for 8-12 minutes or until edges are set and the centers still look soft. Do not over-bake.
Notes
- Use softened salted butter that dents when pressed but isn’t overly soft for optimal texture.
- Measure flour by fluffing and leveling to avoid dense or crumbly cookies.
- Use vanilla instant pudding mix—not cook-and-serve—and add dry mix directly to dough.
- Choose semisweet chocolate chips or substitute with milk, bittersweet, or white chocolate chips.
- Remove cookies from oven when edges are set but centers look slightly underdone to maintain softness.
