Chocolate Chip Pumpkin Bars combine pumpkin puree with warm spices, chocolate chips, and a tender batter baked into moist, spiced bars. The texture is soft and cakey with pockets of melted chocolate providing sweetness alongside the subtle earthiness of pumpkin and aromatic spices.

Description

This recipe starts by combining all-purpose flour with cinnamon, nutmeg, cloves, ginger, baking powder, and salt. Butter and both granulated and brown sugars are creamed, then mixed with egg, vanilla, and pumpkin puree. The dry ingredients are gently folded in along with most of the chocolate chips. The batter is spread in a prepared pan and topped with the remaining chocolate chips before baking.

When baked, the bars develop a soft crumb with aromatic spice notes balanced by bursts of semi-sweet chocolate. Cooling completely before cutting ensures clean squares and the right texture.

The pumpkin bars work well as a snack or dessert, especially in autumn when pumpkin flavors are popular. They can be served plain or with a dusting of powdered sugar.

  • 2 cups all-purpose flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/4 teaspoon ground ginger
  • 1 1/2 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1 cup butter softened to room temperature, unsalted
  • 1 cup granulated sugar white
  • 1/2 cup brown sugar packed
  • 1 egg large
  • 1 teaspoon vanilla extract
  • 1 cup pumpkin canned
  • 1 1/2 cups chocolate chips I used mini, semi-sweet

Instructions

  1. Preheat oven to 350 degrees F.
  2. Butter and line a 13x9inch baking dish with parchment paper, and butter it or spray it with cooking spray.
  3. In a medium bowl whisk together flour, cinnamon, nutmeg, cloves, ginger, baking powder, and salt, set aside.
  4. In the bowl of an electric stand mixer fitted with the paddle attachment, cream together butter and sugars until well combined.
  5. Whisk in the egg and vanilla extract, then add in the pumpkin puree.
  6. Add the flour mixture to the pumpkin mixture and stir just until combined, then fold in the chocolate chips, leaving aside ¼ cup.
  7. Spread batter into the prepared pan, and sprinkle on top the remaining ¼ cup chocolate chips.
  8. Bake for about 30 - 35 minutes or until a toothpick inserted in the center comes out clean or with just a few crumbs, not raw batter.
  9. Cool completely in the pan then cut into squares and serve.
