Chocolate Chip Shortbread Cookies
Description
Chocolate Chip Shortbread Cookies are made by creaming room-temperature butter with brown sugar until light and fluffy, then gently mixing in flour to form a soft dough. Semi-sweet chocolate chips are folded in by hand, creating pockets of chocolate flavor within the buttery base. The dough is shaped into a log, wrapped, and refrigerated to firm up for easy slicing.
Slicing the chilled dough produces uniform rounds that bake evenly at 325°F until the edges begin to turn golden. The shortbread texture remains tender and crumbly, with a balance of sweet and buttery notes. The semi-sweet chips contrast nicely without overpowering.
These cookies can be served as an everyday sweet snack or paired with tea or coffee. Adjustments such as a pinch of salt or vanilla extract are optional but can enhance depth. Using quality butter makes a noticeable difference in flavor.
Ingredients
- 1 cup butter room temperature
- 1/2 cup brown sugar
- 2 cups flour
- 3/4 cup chocolate chips semi-sweet
Instructions
- Use an electric mixer to cream together the butter and sugar until light and fluffy. Beat in the flour until just combined. Do not overmix.
- Stir in the chocolate chips by hand.
- Scoop the dough out onto a large sheet of plastic wrap. Use the wrap to shape into a log about 10 inches long and 2-3 inches thick. Seal the ends and place in the refrigerator for 1 hour.
- Preheat the oven to 325 degrees. Line a baking sheet with parchment paper.
- Remove the log of dough from the fridge and unwrap the plastic wrap. Use a sharp knife to slice the dough into rounds about 1/4 inch thick.
- Bake for 13 minutes or until the edges are just beginning to turn golden. Do not overbake.
- Cool completely before serving.
Notes
- You can use any type of chocolate chips, including milk or dark chocolate, according to preference.
- Adding a pinch of salt or a splash of vanilla extract is optional but can improve flavor complexity.
- Use real butter rather than margarine for best texture and taste.
- Chilling the dough before baking helps maintain the shape and results in a better texture.
