Instructions
- Add the butter and sugars to the bowl of a stand mixer fitted with a paddle attachment and beat on medium speed for 10 minutes, scraping down the sides of the bowl every few minutes. The mixture will be really pale and fluffy.
- Beat in the egg and vanilla just until combined.
- In a separate bowl, whisk together the flour, baking soda, cream of tartar, and salt and add it to the butter mixture and mix until combined.
- Fold in the chocolate chips and cover and chill in the refrigerator for 1 hour.
- After chilling, preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
- Use a medium cookie scoop to portion out the cookie dough and roll it into a ball and then roll it in the granulated sugar and place cookies dough balls at least 2 inches apart on the baking sheet and bake for 1o to 12 minutes until the edges begin to turn a golden brown and the tops are still light.
- Cool on the pan for a couple of minutes before transferring to a wire rack to cool completely.
Notes
- The timing of the mixing is incredibly important, do not shorten it or it will change the texture of the cookies. Granulated sugar may be used in place of light brown sugar, but brown sugar is a very traditional ingredient of chocolate chip cookies. The cookies should remain good for a few days at room temperature in an airtight container. Balls of cookie dough can be frozen on a cookie sheet then transferred to a freezer bag and stored for up to 3 months.
