Ingredients

  • 2 cups all-purpose flour
  • cup sugar
  • ½ cup unsweetened cocoa powder
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 ½ cups plant-based milk
  • 1 tablespoon apple cider vinegar
  • ½ cup neutral oil
  • ½ cup applesauce unsweetened
  • 1 cup semi-sweet chocolate chips dairy-free

Instructions

  1. Preheat the oven to 375 degrees F. Prepare 12 muffin cups with liners.
  2. In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, and salt. Mix well.
  3. In a medium bowl, mix the vegan milk and apple cider vinegar until it thickens. Mix in the oil and apple sauce and then add it to the bowl with the flour mixture. Do not overmix.
  4. Fold in the dairy-free chocolate chips.
  5. Spoon batter into muffin pan filling to the top.
  6. Bake for 20 to 25 minutes or until a tester inserted into the middle comes out clean.
  7. Remove from the oven and place the tray on a cooling rack.
  8. Enjoy warm or at room temperature.
