Chocolate Chunk Molasses Ginger Cookies
Description
The Chocolate Chunk Molasses Ginger Cookies combine a spiced molasses base with aromatic cinnamon, ginger, cloves, and a hint of cayenne for warmth. Creaming the butter and sugar until light ensures a soft texture, while careful mixing of dry ingredients avoids toughness. Rolling the dough balls in sugar before baking adds a crisp exterior contrast to the chewy centers. The generous amounts of chocolate chunks throughout add melty richness that balances the spice. Baking at 350 degrees for 10 to 13 minutes yields cookies browned at edges with a soft bite inside.
These cookies offer a festive flavor and fragrance that suits fall and winter occasions. The balance of sweet, spicy, and chocolaty notes makes them enjoyable with tea or coffee, as a holiday treat, or for sharing with friends and family. Their moderately soft texture and slightly crunchy tops make them satisfying to bite into.
The recipe is straightforward, requiring common baking spices and simple rolling and baking steps. Adding chocolate chunks on top before baking can give a more appealing look. They store well for a few days in an airtight container, maintaining their chewy texture.
Ingredients
- 12 Tablespoons butter (3/4 cup)
- 1 cup sugar (plus more for rolling)
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup molasses
- 1 teaspoon cinnamon
- 1 teaspoon ginger
- 3/4 teaspoon cloves
- 1/4 teaspoon cayenne pepper powder
- 2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 1/2 cups chocolate chunks
Instructions
- Preheat oven to 350 degrees. In a large mixing bowl, cream butter and sugar for 4 minutes until light and fluffy and pale in color. Add egg and vanilla. Add molasses and mix well.
- Add flour, baking soda, baking powder, salt, cinnamon, ginger, cloves, and cayenne pepper. Mix just until combined to avoid over-mixing the dough. Fold in chocolate chunks.
- Place sugar into a small bowl. Roll dough into small balls and roll into sugar, coating well. If you want the cookies to look like the ones in this recipe, place a few dark chocolate chunks on the top of the cookie before baking.
- Place on a parchment paper-lined baking sheet and bake for 10-13 minutes.
