Description

The preparation begins with melting semi-sweet chocolate until smooth. Separately, egg yolks, espresso powder, sugar, and part of the cream are cooked gently to dissolve the coffee and create a caramel-toned mixture. This custard base is whisked into the melted chocolate and chilled until firm. Whipping the remaining cream with sugar to stiff peaks and folding it into the chocolate mixture yields a light, fluffy texture.

Divided into serving cups or bowls, the mousse is chilled at least an hour to set before serving. The balance of coffee and chocolate offers a smooth, mildly bittersweet flavor profile with a rich mouthfeel. Optional garnishes like whipped cream, chocolate shavings, or chocolate-covered coffee beans add visual appeal or texture.

  • 8 ounces semi-sweet chocolate
  • 3 egg large yolks
  • 2 teaspoons instant espresso powder
  • 6 tablespoons sugar divided, granulated white
  • 2 cups heavy cream divided

Instructions

  1. Melt the chocolate (either a bowl over boiling water, or in small increments in the microwave).
  2. In a saucepan, whisk together the egg yolks, espresso powder, 4 tablespoons of the sugar, and ¾ cup of the cream. Cook over medium heat, stirring constantly with a rubber spatula for 2 minutes, until the coffee dissolves and is blended completely. The color will be a caramel brown.
  3. Add the mixture, to the melted chocolate and whisk until smooth. Refrigerate until completely chilled.
  4. Beat the remaining cream and sugar until stiff.
  5. Remove the chocolate mixture from the fridge, and whisk a little until smooth and mix-able,  then fold  the whipped cream in.
  6. Divide mousse into serving cups, or bowls, and chill until needed (at least an hour).
  7. Decorate with whatever you like (whipped cream, chocolate covered coffee beans, chocolate shavings... or not at all!
  8. Devour.
