Ingredients
- 1 1/3 cup milk chocolate 220g, chips or chunks
- 1 1/3 cup semi-sweet chocolate 220g, or dark chocolate, chips or chunks
- 1 tablespoon honey 20g
- 4.5 cups cornflakes 160g
Instructions
- Line two baking sheets with parchment paper and set aside.
- In a large bowl, add the cornflakes. Crush for a few seconds with your hands until some pieces are broken up and some pieces are still intact.
- Add both chocolates to a microwave safe bowl. Melt gently by microwaving in 30 second intervals, stirring with a spatula after each 30 seconds, until chocolate is nearly all melted. At this stage, stir until chocolate melts completely.
- Mix in the honey and stir to combine.
- Pour the chocolate mixture over the cornflakes, and stir quickly with a rubber spatula to coat evenly.
- Use a spoon to scoop up about 1 tablespoon of the chocolate cornflake mix onto the parchment paper. Use another spoon to sort of push it into a cluster shape. It'll be wet but it'll set quickly.
- Repeat until all the chocolate cornflake mix is used up. Chill in the fridge until set, this won't take longer than 30 minutes! Store any extra clusters at cool room temperature (probably not the best idea in the summer) or in the fridge. If storing in the fridge, let them come to room temp before enjoying.
Notes
- Use any combination of chocolate chips, chopped bars, or buttons you have on hand.
- To make peanut butter chocolate bites, add a tablespoon or two of peanut butter to the chocolate before melting.
- Store leftovers in an airtight container in the fridge for up to 2 weeks or freeze for up to 3 months.
- Thaw frozen clusters briefly at room temperature or overnight in the fridge before serving.
