Chocolate Covered Cherries

Chocolate Covered Cherries feature maraschino cherries wrapped in a sweet fondant made of butter, corn syrup, and powdered sugar, then dipped in melted semi-sweet or milk chocolate mixed with oil. The cherries are first coated in a firm dough and chilled before dipping, resulting in a smooth, shiny chocolate exterior encasing a sweet cherry center. This candy keeps well when stored in a cool place for up to two weeks, allowing the fondant to soften and the flavors to meld beautifully.

Description

Chocolate Covered Cherries combine maraschino cherries with a soft fondant and a chocolate coating. Each cherry is encased in a fondant dough made from butter, corn syrup, and sifted powdered sugar, then chilled to firm up. After wrapping, the cherries are dipped in melted chocolate chips mixed with neutral oil, which creates a glossy, smooth finish as it hardens. The recipe emphasizes chilling the cherries before dipping and allowing the finished chocolates to rest until the coating loses its shine, ensuring a proper set. Storing the candies in an airtight container in a cool location for two weeks enhances the texture of the fondant, mellowing its sweetness and yielding a tender bite with each cherry.

The technique results in an elegant candy suitable for gifting or enjoying as a special treat. While the recipe uses maraschino cherries with stems, this detail helps with dipping and presentation. The balance of sweet fondant with the bittersweet or milk chocolate creates a satisfying contrast.

Ingredients

Servings
  • 36 maraschino cherries with stems
  • 3 tablespoons butter softened
  • 3 tablespoons corn syrup
  • 2 cups powdered sugar sifted
  • 18 ounces chocolate chips semi-sweet or milk chocolate
  • 2 teaspoons neutral cooking oil generic cooking oil

Instructions

  1. Drain cherries and set on paper towel to dry
  2. In a medium bowl, combine butter and corn syrup until smooth.
  3. Stir in powdered sugar and knead to form a dough. Chill to stiffen if necessary.
  4. Wrap each cherry in about 1 teaspoon of dough.
  5. Place wrapped cherries on a cookie sheet and chill until firm.
  6. In a microwave-safe bowl melt chocolate chips with oil for about 20 seconds at a time (stirring each time) until chocolate is just melted and completely smooth. Dip each cherry in by its stem.
  7. Place dipped cherries on wax paper-lined sheets. Allow chocolate to dry/harden.
  8. When chocolate is no longer shiny, place chocolate covered cherries in an air-tight container (like a large Tupperware or Rubbermaid container). Store in a cool place for TWO WEEKS (yes, it is a long time, but patience, I promise they taste best if you wait until the fondant softens).
  9. After two weeks, cherries can be served or gifted in candy wrappers, gift bags, or boxes.
