Chocolate Covered Cherries Recipe
Description
The Chocolate Covered Cherries recipe starts with maraschino cherries drained and dried, which are then wrapped individually in a buttery dough made from butter, corn syrup, and powdered sugar. Chilling the dough before and after wrapping ensures the coating holds around each cherry firmly. The dough provides a sweet and slightly creamy layer that complements the tartness and juiciness of the cherry.
Once the dough-wrapped cherries are set, they are dipped into melted chocolate candy coating and placed on parchment paper to set in a cool environment. This double coating creates a piece of candy with distinct textures — a smooth chocolate shell, a soft sugar dough interior, and the chewy cherry center. This recipe yields a classic confection with a combination of flavors and a pleasing bite.
These homemade chocolate-covered cherries are best stored in an airtight container at a cool temperature for up to six weeks. Interestingly, their flavor improves after a week or two. Freezing is not advised as expansion of the cherry can crack the chocolate shell, leading to a messy appearance and texture. They can be served as a treat on their own or included in dessert assortments.
Ingredients
- 30 maraschino cherries with stems
- 3 tablespoons butter softened
- 3 tablespoons corn syrup
- 2 cups powdered sugar sifted
- 1 pound chocolate candy coating
Instructions
- Drain cherries and set on paper towels to dry.
- Combine butter and corn syrup, in a medium bowl, until smooth. Stir in powdered sugar and mix to form a dough. Chill for 30 minutes.
- Wrap each cherry in 1 teaspoon of dough and chill again in the freezer for 20-30 minutes.
- While cherries are chilling, melt candy coating according to package directions. Dip each cherry in the chocolate and place on a parchment paper lined cookie sheet.
- Chill cherries until set and ENJOY!
Notes
- Store chocolate covered cherries in an airtight container in a cool place for up to 6 weeks; flavor improves after 1-2 weeks.
- Freezing is not recommended because the cherries expand and can break the chocolate coating, causing a mess.
