Chocolate Covered Crispy Rice Bites

Crispy rice cereal enveloped in almond butter with a touch of sweetness and finally dipped in decadent chocolate... what's not to love?

Ingredients

  • 1 cup nut or seed butter of choice (peanut butter, almond, cashew or sun butter work)
  • 1/2 cup butter, softened
  • 2 cups rice crispy cereal
  • 3/4 cup powdered sugar
  • 1 cup chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Thoroughly combine nut butter and softened butter with a spatula until creamy.
  2. Add powdered sugar and stir to combine. Then, carefully fold in rice crispy cereal.
  3. Roll rice crispy mixture into one inch balls and place on a parchment lined baking sheet. Refrigerate balls until set, about 20 minutes.
  4. Melt the chocolate chips and coconut oil in the microwave in 30 second increments or over the stovetop and stir to combine. 
  5. Drizzle or dip the balls in the chocolate, cool and eat.

Notes

  • If your mixture is a mess when you're trying to roll it into balls, put it in the refrigerator for 10 minutes or the freezer for about 3 minutes. This will help harden it up just enough so it's easier to work with. Make sure you don't leave it in the freezer for too long or you'll freeze it, and then you'll have the opposite problem.
  • Make this a fun activity for your kids! Depending on their age, assign them age-appropriate tasks. For example, younger kids can help measure out the ingredients, while older kids can stir the mixture and form the balls. Or even try making different shapes with the mixture!
  • Add decorations to make these for a special occasion! After drizzling the chocolate over the balls, you can add decorations like sprinkles or chopped nuts to make them look more festive.
