Chocolate Covered Raw Brownies
Description
This recipe starts by soaking pitted Medjool dates briefly to soften them, then blending them with crushed mixed nuts to achieve a crumbly consistency. Cocoa powder, tahini, and vanilla extract are added to intensify the flavor and bind the mixture. The mixture is shaped into balls approximating table tennis size and chilled to firm up.
After chilling, the balls are dipped into melted dark chocolate, which coats them fully and adds a glossy, rich exterior. Sprinkling with reserved crushed nuts adds a pleasant texture contrast on top. They are refrigerated again until the chocolate sets.
The resulting raw brownies possess a tender chew from the dates and nuts, highlighted by the bittersweet finish of dark chocolate on the outside. They are convenient for a sweet snack without baking.
The recipe notes recommend using good quality dark chocolate for the best flavor impact and suggest using whatever nuts you have available, which makes this recipe adaptable and accessible.
