Chocolate Covered Snickers Stuffed Dates

Chocolate Covered Snickers Stuffed Dates are a sweet snack made by filling Medjool dates with peanut butter and crushed peanuts, then coating them in melted dark chocolate mixed with coconut oil. The final touch of sprinkled peanuts provides additional texture. This combination offers a chewy, creamy, and crunchy bite with a balance of natural date sweetness and rich chocolate and peanut flavors.

Description

The recipe starts by slicing each Medjool date to remove pits, then filling each with approximately half a teaspoon of peanut butter and a sprinkle of crushed peanuts. Dark chocolate chunks are melted with coconut oil in short increments to achieve a smooth coating mixture. Each stuffed date is dipped into the chocolate, fully coated using a spoon, and then sprinkled with extra crushed peanuts before chilling in the refrigerator to set the chocolate.

These treats combine the natural chewiness and sweetness of dates with the creamy, salty contrast of peanut butter and peanuts, all enveloped in a glossy dark chocolate shell. The recipe's method retains the freshness and distinct textures of each component for a balanced bite-sized snack.

Leftover chocolate covered dates keep well in a sealed container refrigerated for up to one week. Variations can accommodate nut allergies by substituting different nut butters or nuts according to preference.

Ingredients

Servings
  • 10 Medjool dates
  • 2 Tablespoons peanut butter
  • ¼ cup peanuts chopped or crushed
  • ½ cup dark chocolate chunks dairy-free or chocolate chips
  • 1 teaspoon coconut oil

Instructions

  1. Cut a slit in each date and remove the pit.
  2. Fill each date with peanut butter (about ½ teaspoon) and a sprinkle of crushed peanuts. Set aside.
  3. Place the dark chocolate and the coconut oil in a microwave safe bowl and melt in the microwave in 15 second increments, stirring between each. It shouldn't take longer than 1-2 minutes total.
  4. Using a toothpick, dip each date into melted chocolate and use a spoon to coat the date until completely covered. Place chocolate covered date on a platter lined with parchment. Sprinkle remaining crushed peanuts on top of each date.
  5. Place the dates in the fridge to allow the chocolate to set.
  6. Keep leftover chocolate covered dates in a sealed container in the fridge for up to a week.

Notes

  • Substitute any nut butter and nuts if there is a peanut allergy.
  • For a single serving, use one date, 1/2 teaspoon peanut butter, 1 teaspoon crushed peanuts, and 1 tablespoon melted chocolate.
