Chocolate Covered Strawberries
Description
This recipe uses fresh, high-quality strawberries washed and dried carefully to maintain firmness and prevent moisture from affecting the chocolate coating. The milk chocolate chips melt gently in a double boiler method over simmering water, ensuring a smooth and even texture. Dipping the strawberries by holding their leaves and swirling them into the melted chocolate coats them evenly, then setting them on parchment paper allows the chocolate to harden without sticking.
For decoration, a second layer of melted white chocolate can be piped over the milk chocolate-coated strawberries to create contrast and design. The chocolate-covered strawberries are chilled to firm up and are best enjoyed the day they are made, although they can be refrigerated for 2-3 days. This recipe is commonly prepared for Valentine's Day or special events when strawberries are at their best quality and size.
Buying extra strawberries is recommended to account for any soft or bruised fruit discarded before dipping. The chocolate can also be melted in a microwave as a shortcut. Storing them in the fridge maintains freshness, but consume within a few days to ensure the best texture.
Ingredients
- 2 pounds strawberry Buy a little more than you plan on making it, fresh
- 23 oz milk chocolate chips ( A bag of 23 oz)
- 11 oz white chocolate chips (A bag of 23 oz or 11 oz)
Instructions
- Pick the best and good strawberries, no bruised, mushy or cut ones. (I bought 3 pounds of strawberries and only can use around 2 pounds of strawberries for this batch. Always buy a little more strawberries than you plan for making in case of the bad ones.)
- Pour 8 cups of water into a mixing bowl.
- Then, put the good fresh strawberries into the bowl and wash it.
- After that, drain the water and dry each of the strawberries with a paper towel gently. Make sure the strawberries are dry before dipping into chocolate, this step is very important.
- Put parchment paper on the tray.
- Pour 3 cups of water into a pot over the stove.
- Next, put a bowl over the pot and put a bag of milk chocolate chips (23 oz) into a bowl.
- Turn on low medium fire, keep stirring the chocolate chips with a spatula until the chocolate melts smoothly.
- Take a washed and dry strawberry, hold on the leaves and dip it into the melted milk chocolate. Then, move around clockwise to make sure the sides get covered with chocolate. See details in the video below the recipe card area.
- If you like white chocolate, pour a bag of white chocolate chips (11 or 23 oz) into the bowl over the pot like steps 6 and 7.
- Turn on low medium fire, keep stirring the white chocolate chips with a spatula until the chocolate melts smoothly.
- After, hold on the leaves of the strawberry and dip it into the melted white chocolate. Then, move around clockwise to make sure the sides get covered with chocolate. See details in the video below the recipe card area.
- Next, after dipping the strawberries into the melted chocolate, put them on the tray with parchment paper and let it dry a little bit. Then, put them into the refrigerator for 30 minutes.
- After the chocolate strawberries are refrigerated for 30 minutes, the chocolate will harden.
- The following step, put a ½ cup of melted white chocolate into a ziplock bag or a piping bag. Then, cut a small hole at the corner. (If the chocolate hardens, melt it again before putting it into the bag.)
- Pipe the melted white cocoa on the coated strawberry.
- Repeat step 16 and finish decorating the coated strawberries.
- Put the decorated coated strawberries into the refrigerator for 15 minutes and let it dry and harden the topping.
- This time put a ½ cup of melted milk chocolate into a ziplock bag or a piping bag. Then, cut a small hole at the corner. (If the chocolate hardens, melt it again before putting it into the bag.)
- Pipe the melted milk chocolate on the white chocolate covered strawberry.
- Repeat step 20 and finish decorating the coated strawberries.
- Next, put the decorated coated strawberries into the refrigerator for 15 minutes and let it dry and harden the topping.
Notes
- Purchase extra strawberries to replace any bruised or mushy berries before dipping.
- Choose medium to large fresh strawberries without damage for best results.
- Thoroughly dry strawberries with a paper towel before dipping to help chocolate stick properly.
- Chocolate can be melted using a double boiler or microwave until smooth.
- After dipping, let chocolate harden at room temperature, then refrigerate for 30 minutes to set.
- Decorate with piped white chocolate and chill again before serving.
- Best consumed the same day, though refrigerated leftovers keep 2-3 days.
