Chocolate Covered Strawberries

Chocolate Covered Strawberries combine fresh, ripe strawberries dipped in smooth semi-sweet chocolate and accented with a drizzle of white chocolate. The outer texture is crisp from the hardened chocolate coating, contrasting with the juicy, tender strawberry inside. Preparing these treats requires carefully drying the strawberries and gently melting the chocolates in batches. Chilling the dipped berries helps the chocolate set completely, making these an elegant, simple dessert or special occasion treat.

Description

Chocolate Covered Strawberries involve coating whole ripe strawberries, with stems intact, in melted semi-sweet chocolate. After washing and ensuring they are completely dry, the strawberries are dipped and covered with the dark chocolate, which is gently melted over simmering water to prevent seizing. The berries are chilled to set the coating before a final drizzle of white chocolate is added. Setting the white chocolate drizzle fully in the refrigerator creates a visually appealing contrast and adds a subtle sweetness.

The texture balances a crisp chocolate shell with a juicy strawberry center, emphasizing the fresh fruit's flavor while adding richness from the chocolate. This recipe requires patience to dry the fruit properly and careful melting of the chocolates to maintain smoothness.

These strawberries are best served chilled to retain the firm chocolate exterior. They make a refined and straightforward dessert or a decorative addition to parties. For an extra touch, some users suggest trying a salted caramel drizzle to complement the berry sweetness.

Melting chocolate using the double boiler method helps avoid overheating and thickening. Ensuring the strawberries are completely dry before dipping is essential so the chocolate adheres well. Refrigerate the finished berries to allow the chocolate to harden before serving.

Ingredients

Servings
  • 1 lb strawberries fresh and ripe
  • 10 oz semi-sweet chocolate chopped
  • 3-4 oz white chocolate chopped

Instructions

  1. Wash and very gently dry the strawberries, keeping stems on.  Set aside to finish air drying.
  2. Set dark chocolate in a glass or metal bowl over saucepan of simmering water, bowl not touching water. Stir frequently until chocolate is smooth and just melted.  Don't over cook, so the chocolate doesn't seize up and thicken.  Remove from heat once melted.
  3. Carefully dip each strawberry in dark chocolate, twisting to cover completely with chocolate.  Set on parchment or wax paper on platter and put berries in fridge to set, about 30 min.
  4. Repeat melting process for white chocolate.  Using fork or toothpick, drizzle white chocolate over cooled chocolate strawberries.  Return to fridge for at least an hour. Serve chilled.

Notes

  • Ensure strawberries are fully dry before dipping to help chocolate hold firmly.
  • Melt chocolate gently over simmering water or in short microwave bursts, stirring frequently.
  • Chill dipped berries thoroughly to set chocolate before adding white chocolate drizzle.
  • Consider adding an optional drizzle of salted caramel sauce for variety and extra flavor.
