INGREDIENTS:

  • 1 cup unsalted butter 226g, 2 sticks
  • 1 cup granulated sugar 200g
  • 2 egg
  • 4 cups all-purpose flour 480g
  • 3/4 cup cornstarch 96g
  • 3/4 teaspoon kosher salt 3g
  • 1 teaspoon vanilla extract 5mL
  • 1 cup chocolate chips 175g, semi-sweet
  • ½ cup candy cane crushed

Instructions

INSTRUCTIONS:

  1. Preheat to 375 degrees F.
  2. In a standing mixer fitted with a paddle attachment, cream butter and sugar together.
  3. Add eggs.
  4. On low, mix in flour, cornstarch and salt.
  5. Add vanilla.
  6. Separate dough into two parts. Wrap in plastic and chill for about an hour. 
  7. Roll out between two pieces of parchment paper.
  8. Roll to a ½ inch thickness.
  9. With a cookie cutter, cut out circles
  10. Place cookies on a baking sheet lined with parchment paper.
  11. Bake for 12 minutes.
  12. Let cool.
  13. Melt chocolate in a bowl.
  14. Dip half the cookie into melted chocolate.
  15. Sprinkle crushed candy cane over cookies.
