Chocolate Dr Pepper Cake
Description
Chocolate Dr Pepper Cake uses a standard boxed chocolate cake mix enhanced by the addition of chocolate pudding mix and Dr Pepper soda for moisture and subtle flavor. Eggs and vegetable oil complete the cake batter. After baking in a 9x13 pan until a toothpick comes out clean, the cake receives a special frosting. This frosting is made by melting butter, then whisking powdered sugar, Dr Pepper, cocoa powder, and vanilla together. It is boiled briefly to develop a slightly thickened, pourable glaze. The warm frosting is poured centrally over the cake and smoothed out before cooling to set.
The cake has a tender crumb and the frosting adds a rich sheen with a light fizz note from the soda, creating a distinctive chocolate dessert with a layered flavor profile. Garnishes like chocolate sprinkles or nuts can be added while the frosting is still warm to help them adhere. This cake can be sliced after the frosting cools and firm.
To store, keep the cake covered in plastic wrap or a lid in the refrigerator for up to three days. Pour the frosting in the center carefully to avoid too much pooling at edges, which can result in overly sweet bites. Variations can include using different frosting styles, such as fruity or buttercream options.
Ingredients
Cake
- 1 chocolate cake mix box mix
- 3.4 ounces chocolate instant pudding mix box
- 3 egg large
- ¾ cup vegetable oil
- 8 ounces Dr Pepper
Frosting
- ½ cup butter salted
- 2 ½ cups powdered sugar
- ⅓ cup Dr Pepper
- ½ cup cocoa powder
- 1 tsp vanilla
Instructions
Cake
- Preheat oven to 350 degrees and spray a 9x13 baking dish with non-stick baking spray.
- Mix together all the cake ingredients until fully combined. Pour into the prepared baking dish.
- Bake in the preheated oven for 35-40 minutes or until a toothpick comes out clean when inserted into the center.
Frosting
- Melt butter in medium-sized pan over medium heat.
- Whisk in sugar, Dr Pepper, cocoa powder, and vanilla keeping the heat on medium.
- Stir constantly until brought to a boil. Reduce heat and boil for 1 minute. Then remove from the heat and allow the frosting to cool for 25 minutes. Set a timer and make sure you don't let it cool much longer so it's still pourable.
- Pour the warm frosting over the baked cake and add chocolate sprinkles or nuts as garnish (if desired) then allow the frosting to cool for at least 30 minutes before slicing and serving.
Notes
- Pour frosting slowly in the cake center and smooth it out to prevent pooling at the edges, which makes those pieces sweeter.
- Consider variations by swapping the frosting for fruity, buttercream, or whipped versions to suit your taste.
- Add toppings while the frosting is warm so they adhere well and don’t fall off after setting.
- Store the cake covered in the refrigerator for up to three days to maintain freshness.
