Chocolate Frosting
Description
The Chocolate Frosting combines salted butter and cream cheese beaten together until smooth and fluffy, forming a creamy base. Unsweetened cocoa powder adds a deep chocolate flavor, complemented by vanilla extract and espresso powder, which enhances the chocolate notes. Gradually incorporating powdered sugar with some milk creates a thick and spreadable frosting. Chilling the frosting will cause it to thicken further, resulting in a stable texture that holds well on cakes or cupcakes.
This frosting pairs well with various chocolate and vanilla cakes, providing a creamy sweetness with subtle bitterness from the espresso powder. Using high-quality cocoa powder is important to achieve a rich chocolate taste.
To ensure even mixing, scrape the bowl sides repeatedly while beating. All ingredients should be at room temperature for smooth blending. The frosting can be refrigerated for up to 5 days in an airtight container and re-whipped before use. It also freezes well for up to a month.
Ingredients
- 1½ cups butter salted, softened
- 8 ounces cream cheese softened
- 1½ cup cocoa powder unsweetened
- 2 teaspoon vanilla extract
- 1 teaspoon espresso powder
- 7-8 cups powdered sugar same as confectioners sugar or icing sugar
- ¼ cup milk
Instructions
- Combine butter and cream cheese: To the bowl of your mixer, add the butter and cream cheese and mix until fluffy and smooth.
- Mix in chocolate ingredients: Add the cocoa powder, vanilla extract and espresso powder to the bowl and mix until well combined.
- Add icing sugar and milk: Beat in the powdered sugar, 1 cup at a time, adding a bit of milk as necessary until it reaches a spreadable consistency. The frosting should be thick. This frosting will thicken further when refrigerated.
Notes
- Use room temperature butter and cream cheese for best texture when mixing.
- Scrape down bowl sides frequently during mixing to blend ingredients fully.
- High-quality cocoa powder enhances the frosting's chocolate flavor.
- Espresso powder can be substituted with instant coffee powder in the same amount for similar depth.
- Store leftover frosting in an airtight container refrigerated up to 5 days; re-whip before use.
- Frosting freezes well up to 1 month; thaw and re-whip before spreading.
- If needed, add a pinch of salt when using unsalted butter to balance sweetness.
