Chocolate Fruit Bars
Description
This recipe uses non-dairy semi-sweet chocolate chips melted gently in the microwave and then combined with dried fruits and chopped nuts. The dried cranberries and raisins or dried apricots add natural sweetness and chewiness, while the nuts introduce crunch. The mixture is spread evenly in a parchment-lined pan and frozen until firm.
Once cooled, the mixture is cut into bars that hold their shape well due to the chocolate binding. These bars can be stored refrigerated for up to a week or frozen for longer storage, making them practical for make-ahead snacking.
Separating bars with parchment or wax paper prevents sticking in storage. The recipe allows flexibility with dried fruit and nut choices based on preference.
