Description

The Chocolate Icebox Cake assembles layers of chocolate graham crackers and a whipped filling made by blending cream cheese, powdered sugar, cocoa powder, and folded-in Cool Whip. The layering creates a dessert that is rich in chocolate and smooth in texture. A homemade ganache topping, made by melting chocolate chips with heated heavy cream, is poured over the cooled layered cake, adding a glossy finish and intensified chocolate flavor.

The cake requires refrigeration for several hours or overnight to allow the crackers to absorb moisture and soften, resulting in a cake-like consistency. The optional mini chocolate chips topping adds a textural contrast and extra chocolate note.

  • Icebox Cake Ingredients:
  • 1 pkg chocolate graham crackers 16 oz.
  • 12 oz cream cheese
  • 1/2 cup powdered sugar
  • 1/2 cup cocoa powder
  • 8 oz Cool Whip thawed
  • Ganache Topping Ingredients:
  • 1/2 cup heavy whipping cream
  • 1 cup chocolate chips
  • Optional Topping:
  • mini chocolate chips

Instructions

  1. Beat together the cream cheese, powdered sugar and cocoa powder in a mixing bowl until the mixture is smooth and fluffy.
  2. Gently fold in the cool whip.
  3. Place a single layer the chocolate graham crackers in a single layer in the bottom of an 8X8 or 9X9 pan.
  4. Then top with 1/3 of the cream cheese mixture spreading it evenly over the top.
  5. Continue layering 2 more times.
  6. Then to make the ganache topping:  Place the topping ingredients in a microwave safe bowl and heat in 30 second intervals (stirring between each interval) until the chips are melted and well combined.
  7. Pour the ganache topping evenly over the cake.
  8. Refrigerate for 4-5 hours (overnight is preferred) until the graham crackers have softened.
  9. Top with the mini chocolate chips if preferred.  Serve and enjoy!
