Description

This cheesecake starts with a crust of crushed Oreo cookies mixed with melted butter, pressed into a springform pan and chilled to firm. The filling uses room temperature cream cheese beaten with sugar, flour, eggs, vanilla, and sour cream for richness and smooth texture. A portion of the batter is reserved to be mixed with melted semisweet chocolate and additional sour cream to create the chocolate swirl.

The chocolate and plain batters are alternated in the pan, then a skewer is used to marbleize the surface, producing a distinctive pattern after baking at a low temperature (300°F) for about an hour. Cooling slowly in the oven helps prevent cracking on the surface.

For the Crust:

  • 10 Oreo cookies
  • 3 tbsp butter melted

For the Cheesecake:

  • 2 1/2 pounds cream cheese room temperature
  • 1 3/4 cups sugar
  • 3 tablespoons flour
  • 1/4 teaspoon salt
  • 2 egg yolk
  • 5 egg
  • 1 teaspoon vanilla
  • 3/4 cup sour cream plus 1/4 cup
  • 6 ounces semisweet chocolate melted and slightly cooled

Instructions

INSTRUCTIONS:

  1. In a springform pan, add crushed oreo and melted butter.
  2. Mix and press down. Refrigerate.
  3. In a stand mixer fitted with a whisk attachments, add softened cream cheese. Beat in both sugars.
  4. Slowly add eggs in. Add vanilla, sour cream, and flour. Beat until smooth.
  5. Reserve 2 cups of the mixture.
  6. Mix melted chocolate and mix with the extra 1/4 cup sour cream. Add to chocolate mixture to the reserved batter.
  7. Alternate by pouring the batters into the springform pan.
  8. Use a skewer to create a marbleized look.
  9. Bake at 300 for about an hour. Leave in the oven to cool for another hour or two.

Notes

  • Baking the cheesecake at a low temperature for a longer time helps prevent cracking on the surface.
