Chocolate Mashed Potato Cake
Description
The Chocolate Mashed Potato Cake is a unique dessert incorporating warm mashed potatoes and melted unsweetened baking chocolate into a traditional cake batter. Along with cake flour, baking soda, butter, sugar, eggs, buttermilk, and vanilla extract, the potatoes add moisture and a creamy texture that contrasts with the cocoa richness. The batter produces a tender crumb after baking in a greased 9x13-inch pan at 350°F until a toothpick comes out clean.
After cooling, the cake is covered with a chocolate frosting made by beating softened butter and powdered sugar with melted chocolate and milk, creating a smooth, rich topping. The combination gives the cake a dense yet soft mouthfeel enhanced by the bittersweet chocolate.
This cake serves well as a comforting dessert and pairs with coffee or milk. The incorporation of mashed potatoes provides an interesting approach to moisture and texture in chocolate cakes without altering the flavor drastically. Ensuring all ingredients are at room temperature helps the batter blend evenly and bake uniformly.
Using cake flour ensures a lighter crumb while substituting appropriate homemade cake flour or careful measuring prevents heaviness. Salted or unsalted butter can be adjusted based on preference. Buttermilk adds tenderness and slight tang, with the option to substitute if necessary. Both instant and regular mashed potatoes work, and the texture of the potatoes is important for smooth batter consistency.

- Buttermilk can be regular or low-fat, or made from a substitute if not available.
- Instant or freshly made mashed potatoes can be used according to availability; mashed potatoes should be plain and warm.
