Chocolate Mashed Potato Cake

  • 1 ¾ cups cake flour
  • 1 ½ teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter at cool room temperature
  • 1 ½ cups granulated sugar
  • 2 egg at room temperature, large
  • 1 cup buttermilk at room temperature
  • 1 teaspoon vanilla extract
  • 4 ounces unsweetened baking chocolate melted and cooled slightly
  • 3/4 cup potato warm, mashed, plain

Chocolate Frosting

  • 12 tablespoons butter softened
  • 3 cups powdered sugar
  • 3 ounces unsweetened baking chocolate melted and cooled slightly
  • 3-4 tablespoons milk or half-and-half or heavy cream

Instructions

To make the cake

  1. Preheat oven to 350 F. Grease and flour a 9x13-inch baking dish. Set aside.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat butter and sugar together until combined. 
  4. Beat in eggs, buttermilk, and vanilla until well-combined.
  5. Add mashed potatoes and melted chocolate. Mix until incorporated. 
  6. Stir in flour mixture until just incorporated. 
  7. Pour batter into prepared baking pan, smoothing as needed.
  8. Bake for 35-50 minutes, or until a wooden toothpick inserted in the center comes out clean. 
  9. Let cake cool to room temperature before frosting.

To make the frosting

  1. Beat butter and powdered sugar together until well-combined.
  2. Mix in chocolate and milk until completely incorporated. 
  3. Spread over cooled cake. 

Notes

  • If cake flour is unavailable, use a homemade substitute and measure it by stirring or sifting before lightly spooning into the cup and leveling off for accuracy.
  • Use salted or unsalted butter as preferred; the butter consistency should be cool room temperature, around 68°F, soft but still firm enough to hold shape.
  • Buttermilk can be regular or low-fat, or made from a substitute if not available.
  • Instant or freshly made mashed potatoes can be used according to availability; mashed potatoes should be plain and warm.
  • Ensure all ingredients are at room temperature for best batter consistency.
